

Every year as a family we have corned beef, cabbage, potatoes, carrots and celebrate the Irish in us. SO, like every other year I went to the store and bought a small corned beef, some carrots and cabbage. I put it in the oven and began doing other things. I checked it about every 20 minutes adding more water as it needed. It was looking and smelling amazing. Then all of a sudden I noticed a faint scent of smoke in the air. Not wanting to have the awful fire alarm go off and have Megan wake up wondeirng why we had a fire truck siren in our house, I ran to the kitchen and pulled to roast from the oven. It looked fine just a little crispy on the edges and so I hurried and opened all the windows, (BIG MISTAKE) to clear the smoke that was in the kitchen. And then it happened.The biggest explosion in the history of my kitchen. Ryan and Danae would have been proud of this one. The glass pan shattered lifting the corned beef off the wire rack an inch or so.... glass was blown through the house. A shard of glass blistered my toe. I screamed and the alarm sounded anyway. Sorry to all my neighbors. It probably sounded like a murder. BANG!!! SCREAM!!!!!! ALARM BLARING!!!!! YELLING!!!!
Oh and upon the alarm sounding my concerned 2-year- old ran out to help Mom. I yelled at her trying to keep her out of the glass.
Oh boy.......
Sam came to my rescue and cleaned up the glass and then we went out to dinner. What a night.

You are right-- we are proud! Too bad you didn't live closer, we had plenty corned beef and cabbage. We would have been more than happy to share.

My family eats this corned beef and cabbage also. Humm I didn't even think to make it though since I don't like cabbage! Sorry about your mess! I hate cleaning up glass!! Anyway I found your blog- Yeah! We miss you guys!
Wow Megan! I think that sounds like one of my worst nightmares! I'm sure the scariest part of it was cleaning up!
